Chuck-it-all-in Granola

Who else has a drawer or cupboard full of half-used packets of ingredients that’s driving you CRAZY?  Well I have the answer! Granola is endlessly customisable making it perfect for using up all those bits and bobs that you have hanging around. The key is to remember the 4 parts dry to 1 part wet ratio and you can use just about anything (and make sure you add the fruit once it’s out the oven)

 This is a million times better than any shop bought version and you can make it just how you like it

ingredients

  • 350g jumbo oats

  • 125g pumpkin seeds, sunflower seeds , sesame, chia, flaxseeds

  • 150g any chopped nuts, such as hazelnuts, almonds, pistachios, cashews, walnuts 

  • 100ml honey, Agarve, brown rice syrup, maple syrup

  • 100ml olive oil, coconut oil or butter

  • 100g any dried fruit, such as dried cranberry, fig, raisins, cherries, apricots

  • 80g toasted coconut flakes

  • Pinch of salt

  • Optional: 1 tsp ground cinnamon, nutmeg or cardamom  or cocoa

instructions

Preheat the oven to 160C/140C fan. Combine the dry ingredients in a large bowl with a pinch of salt and any spices.

 Separately combine oil and sweetener, then pour over the dry ingredients. Mix well, then spread out over a lined baking tray. Push it down a little to help with clumping.

 Place in the oven for 35-45 minutes until golden, stirring 1-2 times. Once you remove it from the oven, sprinkle over the fruit and coconut flakes and leave to cool completely before breaking up and place in an airtight jar to keep fresh. Will last 2 weeks.
